Smashed Fried Fruity-Veggie Sandwich
So hubby doesn't joke with bread, and I figured eating it plain is boring; eating it with egg is so ordinary and making the Nigeria-ish kind of sandwich (sardine and butter filling) is oh so creepy. Then I learnt how to make a kind of sandwich on Food Network, and I decided to create my own version. This has been my go-to savior each time I think of what lunch to pack for my toddler, for school or what the whole house will take for breakfast. It's packed with a lot of goodness that you just must try it. It's smashing!
- Slice bread
- Parboiled meat (or chicken)
- Pear (or apple or banana)
- Pinch of salt
- Chilli pepper
- Lime/Lemon (optional)
For the filling, chop all the veggies, ginger, carrot and pear (or apple/banana). For the pear, peel the back before chopping. Once chopped, add a dash of lime/lemon so it doesn’t change colour. Mix well. Heat some butter in a frying pan. Once hot, add ginger, garlic and cabbage. Stir well for 3 minutes, the add the chopped carrot, pear, and minced meat (or chopped meat), stir well, then add a pinch of salt, 2 tsp. of sugar, pepper and stir well. Leave to marinate for 2 minutes then take off stove, then set aside in a bowl. After about 1 minute, add 1 tsp of ketchup and 2 tsp. of mayonnaise. Mix well and set aside.
For the bread, spread mayonnaise on the surface, add the filling, the spread mayonnaise on the slice that would be placed on top of the filling. Heat the same pan used for the filling, then place the sandwich or filled bread on it. Leave till it’s brown and turn to the other side. Leave till brown and take off stove. Serve with a chilled bottle of soft drink or hot bowl of pap (for breakfast) and enjoy the delicious goodness!
