My Children’s Fave - Chocolate Cake
It’s Children’s Day today and my little ones are so excited, so I figure I’d just make something they love. Chocolate Cake. You can’t go with this divine goodness. It’s their all-time favourite cake. And the best part is, my toddler is helping me in the kitchen today. So let’s go.
- Cake flour (300g)
- Butter (100g)
- Vegetable oil (2 cooking spoons or depending on the size of cake)
- 3 eggs (yolks and whites separated)
- Milk (half cup of evaporated)
- Warm Water (half cup)
- Cocoa powder (150g)
- Sugar (100g)
- Salt (1 tsp)
- Baking Powder (1 tbsp.)
- Nutmeg or Cinnamon (optional)
Preheat the oven and add grease to the pan to be used before the mixing.
To prepare, add all the dry ingredients together in a bowl – flour, half of the sugar, cocoa powder, salt baking powder, nutmeg or cinnamon (if applicable), mix well and set aside. Then add, in another bowl, sugar and butter, mix for 6mins in a high speed or until fluffy, then add vegetable oil (I'm deliberately using this for a different kind of taste), mix well and then add egg yolks. Mix well at a reduced speed. Then start adding the dry ingredients into the butter-sugar-yolk mix, spoon by spoon, mix and then add milk as you’re adding the dry ingredients spoon by spoon too. Do this until you’ve completely added both the milk and the dry ingredients into the batter. Once this is done, add vanilla (if applicable) and the half cup of warm water into the mix and stir well. In a separate bowl, whisk the egg whites till it’s foamy then add into the batter.
Once ready, transfer into the already greased pan, take to the oven, and bake for 30 -35 mins. Once the time has elapsed, check with a toothpick to see if it’s done. If the toothpick comes out easily then it’s done, if not cook for another 2 to 3 minutes and check. And your Chocolate cake is ready. Delicious!
